6.The specialty dishes in Pu Luong

Lam Rice (Cơm Lam)

Cơm lam is more than a meal — it’s a story passed down through generations. Originating from the mountain dwellers’ need for portable food on forest treks, this dish is made by cooking glutinous rice inside bamboo tubes over open flames. What makes Pù Luông’s cơm lam special is the rice itself, cultivated on terraced fields, known for its pure white grains and delicate fragrance. After soaking, the rice is gently packed into bamboo tubes and grilled over charcoal until the bamboo’s aroma infuses the rice. When split open, the result is sticky rice with a smoky, earthy scent, best enjoyed with salt-sesame or grilled meats.

Hill Chicken

Pù Luông’s hill chicken is renowned for its superior taste, a result of the birds being raised free-range and fed with homegrown rice. Whether it’s grilled, steamed, roasted with ginger, stir-fried with mushrooms and onions, or served in a bubbling hot pot, the chicken’s tender, flavorful meat never disappoints. Among these, grilled hill chicken stands out as a must-try — marinated in traditional Thái spices and roasted until the skin turns golden and aromatic. Simple yet deeply satisfying, this dish epitomizes the authentic flavors of Pù Luông.

Mountain Snail

If you visit Pù Luông during the rainy season, don’t miss the opportunity to try mountain snails. These elusive snails thrive in the cool crevices of caves and rocky outcrops, feeding on medicinal plants that lend their meat a uniquely fragrant, herbaceous taste. After being thoroughly cleaned, they are often steamed with ginger, chili, and lemongrass, and served with a spicy-sweet ginger fish sauce. Besides their culinary appeal, mountain snails are also prized by locals for their health benefits and medicinal properties.

Grilled Stream Fish

For the Thái people, grilled stream fish isn’t just food — it’s a part of their heritage. Freshly caught from the crystal-clear mountain streams, the fish are marinated with an earthy blend of local herbs, crushed nuts, pepper, lemongrass, and a pinch of salt. Medium-sized fish are chosen to ensure the spices permeate the flesh. Once skewered on bamboo sticks, they’re grilled over a charcoal fire until the skin crisps to a golden hue. Pair these with five-colored sticky rice and a sip of traditional rice wine, and you have a meal that captures the essence of Pù Luông. For an even more authentic experience, enjoy this delicacy beside a murmuring stream, watching fresh fish being grilled amidst the cool mist of nearby waterfalls.

Cần Wine

Cần wine, is more than just a drink in Pù Luông — it’s a cultural ritual. Brewed in large ceramic jars using a mix of glutinous rice, forest herbs, cinnamon leaves, and honey, the wine ferments naturally, drawing out a unique blend of sour, sweet, and spicy notes. Drinking rượu cần is a communal affair; guests gather around a jar and sip the wine through long bamboo straws, sharing stories and songs. Especially during the Tết festival, this tradition brings families and visitors together in joyous celebration. For an authentic taste of Pù Luông’s hospitality, raising a bamboo straw to a jar of rượu cần is an absolute must.
